Recipe Tuesday: Chipotle Peppers and Onions

I wanted to share a real easy recipe that I love making.  It’s great when you don’t really want to come up with anything but want a delicious vegetable dish.  This goes great as a side with pretty much anything or as an accompaniment on chicken.  All you need is some peppers and onions, 365 Organics Chipotle Ranch Dressing (from Whole Foods), and your favorite spicy mustard (Dijon, spicy brown, or whole grain mustards all work well).  Cut up your onions and peppers and throw them in a bowl.  Mix in a healthy amount of the dressing with a little bit of the mustard.  Sprinkle a little bit of salt in there to taste as well. Bring a saute pan to medium heat and put a little extra virgin olive oil in it.  Put your peppers in first for a few minutes because they take a little longer.  Then add your onions and saute, stirring occasionally to keep from burning, for 15-30 minutes depending on how you like them cooked.  I like them to be fairly soft so I cook them for a while.  When you’re done you have a mildly spicy, colorful dish that goes great with spicy foods.  Try this next time you make fajitas or add it as a side to your favorite meat dish.
